We served this delicious frozen dessert to our company today and I thought I’d share with you.
Mix: 3 Tablespoons melted butter
3/4 cups crushed graham crackers
2 Tablespoons sugar
Pat into bottom of 8×8 pan. Reserve 3 tablespoons for top.
1 cup sugar
2 cups blackberries (or raspberries)
3 eggs, separated
8 ozs. cream cheese, softened
1 cup Cool Whip
1/2 box (6 oz.) instant vanilla pudding mix — I buy mine in bulk and so use 1/2 cup dry mix.
Beat egg yolks until thick; add cream cheese and sugar. Beat until smooth and creamy. Set aside. Whip egg whites until stiff and fold in Cool Whip. Add 1/2 of all of crushed berries, instant pudding, and cream cheese mixture. Spread over crumbs. If you have berries left over, drop them on top or swirl in with knife. Sprinkle remaining crumbs on top.
Freeze. Remove 1/2 hour before serving.
This needs a whole room full of wonderful company and a big pot of steaming coffee!
