Truthfully, I’m not sure why this is called Camper’s Soup. I’ve never taken it camping.
Instead, we use it when we need something warm, yummy, fast, and easy!
I would personally call it Easy Chicken & Rice Soup. Yeah, I like easy when I’m cooking.
It takes a rice mix – you can use a Rice-a-Roni mix, Knorr Rice Side, or Lipton Rice & Sauce Mix. For this one, I used a Knorr Chicken Rice Side.
It also calls for a can of Rotele tomatoes with green chilies. And that is what I used for this picture. However, my children complain about the heat of the chilies, so sometimes I will just put in a can of plain tomatoes instead.
For us, this is a delicious winter evening comfort food!

Camper’s Soup
1 envelope/box rice mix (Lipton Rice & Sauce or Knorr Rice Side)
2 cans chicken broth
1 can Rotele tomatoes with chilies (or plain tomatoes for no heat)
2-3 cups cooked, chopped/shredded chicken
corn chips and cheese for garnish
Make rice according to package directions. Add broth, tomatoes, and chicken. Heat through.
Serve with corn chips and cheese.
Enjoy on a cold winter night!

Hi! This recipe sounds delicious and warm! If you like the taste of the tomatoes and chilies, try finding the Best Choice Mild Tomatoes and Green Chilies. This is the only brand that I have found that has the added flavor of the chilies and no heat. Even the mild Ro-Tel brand is too hot for me!
