After trying Trim Healthy Mama several times, we began to research more the way we should be eating. Someday I will tell you these baby steps we’ve slowly implemented into our diet, but for now the simple version is that we are trying to eat less processed foods. This means eating food the way God made it.
Some would call this a “whole foods” or “real foods” diet. We don’t follow this strictly, because then I would not be able to have my “come over for ice cream after church Sunday evening” company!
But we are trying to eat healthier overall.
Chicken and Brown Rice
This recipe is one that is extremely simple. As in, so simple you could teach your 6-year-old to make it.
Good idea, Kendra! But maybe you should try it out on your own 13-year-old first . . .
It uses 3 ingredients, plus seasonings. Chicken, brown rice, and water.
I put 2 cups of brown rice in the bottom of the pan, pour 4-5 cups of water on it and throw in 2 bouillon cubes.
Next I lay the raw chicken pieces on top (we like boneless skinless), and sprinkle it all with Johnny’s seasoning salt. Then I cover and cook at 350 for 1- 1/2 hours or until chicken pulls apart easily.
We love this!! And it’s so simple to make – it takes no brainpower for a blonde mama.

Chicken and Brown Rice
Chicken thighs, drumsticks, or breasts
4-5 cups water
2 cups brown rice
2 chicken bouillon cubes
seasonings (salt, pepper, all-purpose seasoning)
Sprinkle rice in large casserole dish. Put in bouillon cubes and water. Lay chicken pieces on top and sprinkle with additional seasonings.
Cover tightly with lid or foil. Bake at 350 for 1-1/2 hours or until chicken pulls apart easily.
