One of my favorites to share with you!
I got this recipe from the same Tea Room where I also got the Tea Room Scones recipe. It is one recipe I will keep for many years to come – especially since I haven’t found one to top it yet!
I love the refreshing taste of grapes in this salad, as well as the flavor of tarragon.
Of course, you can serve it on any style of bread you choose, but my personal favorite is mini croissants. Since our local grocery didn’t have the mini croissants, I opted for the bigger ones and simply cut them into small sandwich pieces.
This salad will keep for at least a week in the refrigerator. One especially yummy way to use up leftovers is to serve it with crackers or pita bread.
Chicken Salad Sandwiches

Chicken Salad Sandwiches
Mix:
8 cups cooked chicken
1 cup relish
1 1/2 cups mayonnaise
1 tablespoon sugar
1 tablespoon tarragon
1 teaspoon garlic granules
Halved red or purple grapes
Mix and spread on bread of your choice. For a healthier version, try serving it on a bed of green and red lettuce.
Refrigerate leftovers.

Mmm, looks good! Have you ever tried it with plain yogurt? I substituted up to 1/2 of the mayo / salad dressing and thot it was delicious!

I’ve never done that – but that’s an excellent idea! Did you use Greek plain yogurt or just plain ol’ yogurt?
