First, you will need to soak it in Tenderquik for 3 days. We clean it and put it in a small cooler. Fill the cooler with water enough to cover the turkey and dump in half a bag of Tenderquik.
Let is sit for 3 days, but be sure to keep it cool with ice.
After 3 days, take it out and rub it down with this mixture:
Oil
Basil
Garlic powder
Salt
Pepper
Italian Seasoning
Cabela’s Open Season all-purpose seasoning (or another all-purpose)
I got this rub recipe from Luke Peters and he said you can pretty much use any spices you want. Fresh is best!
Put it in your crockpot and cook all day. I turned it on high to get the cooking process started good and then down to low. Keep an eye on it and once it is done, it will begin to pull away from the bone.
Take it out and let it set for 10 minutes before pulling off the bone.
However, if yours does like mine did, it falls off the bone. I went to lift it out of the crockpot and the bones stayed there while the meat came with me!
So yummy!
