This is a good meal for suppers when you’re in a hurry! It bakes up real pretty and is delicious, too.
Plus, it only calls for six ingredients! You can’t get much easier than that.

Easy Chicken Potpie
1 2/3 cups frozen mixed vegetables, thawed
1 cup cut-up cooked chicken
1 can cream of chicken soup
1 cup Bisquick
1/2 cup milk
1 egg
Preheat oven to 400. Mix vegetables, chicken and soup. Pour into an ungreased 9-inch pie plate or 8-inch baking dish. Stir remaining ingredients until blended. Pour over vegetable/chicken mixture. Bake 30 minutes or until golden brown.
Makes 6 servings.
*Tip: For more seasoning, add in 1/2 tsp. salt, 1/8 tsp. pepper, and 1/2 tsp. thyme or basil.*

You might want to add some seasoning to that recipe or it going to taste like paper.

I honestly can’t remember if I added salt and pepper! 🙂 Most recipes like this I do it without thinking.

I just made this last night after seeing it on another blog. She says to use about 2 cups veggies (I added a few potatoes to make it heartier) and she recommends 1/2 tsp. salt, 1/8 tsp. pepper and 1/2 tsp. thyme (although next time I’d probably do basil).
It was so good and so easy! I actually cooked up enough veggies to make 4 recipes and just froze the rest of the veggies to make an even quicker meal later.
Oh and if you aren’t making your own Bisquick, you really should be! It’s SO simple and so much healthier and better tasting than the bought stuff. If you need a recipe, I have a good one!

I’d love that recipe! You can email it to me at kendra_graber@yahoo.com.
And thanks for the tips on seasonings. I’ll add it in to the original recipe!
