This is a healthy, gluten-free recipe for scrumptious vegetables roasted in your oven.
Some nights we like to make this with small pieces of chicken that have been fried in oil and then also roasted in the oven. But this makes an excellent side dish to any meal!
Easy Oven Roasted Vegetables
These crisp vegetables get drizzled with olive oil and tossed with salt, pepper, and garlic salt. But you don’t have to stop there! Experiment with different herbs and spices . . . consider this just the basic recipe.
You could try these seasonings and herbs:
- Johnny’s Seasoning Salt (no added MSG)
- Onion salt
- Garlic pepper
- Thyme {it’s better if you can grow this fresh}
- . . . whatever your family likes!
Easy Oven Roasted Vegetables
Ingredients
- vegetables such as broccoli, carrots, cauliflower, onions, cabbage, and mushrooms
- 1/3 cup olive oil
- salt, pepper, and garlic salt
Instructions

Fill a gallon ziploc bag 3/4 full with cut up vegetables.

Pour olive oil in and sprinkle it with seasonings.

Shake well.

Dump onto a cookie sheet lined with foil. Bake at 400 for 30 minutes - until vegetables have a caramelized look and are soft.

Going to try this with a beef roast. I’ve been wanting to try this for the longest but just didn’t have the energy to cook. Cooking isn’t anything I like to do anymore. Food just doesn’t seem to taste good anymore. But the family does so my niece does the cooking. She is a good cook but if the taste isn’t there it buts a blah flavor.
