At a tea party, it is easy to fill up your menu with more baked products than anything else. I wanted to include something that went under the category of “refreshing and healthier.”
These Herbed Cucumber Bites fulfilled both of those in that they combined the healthier aspects of cucumbers and radishes, with a refreshing and minty dollop of cream cheese on top!
The original recipe for these cucumber bites came from this website via Pinterest. As with lots of recipes I find, I tweaked it a bit to include what I had on hand or could find readily available in the store.
Herbed Cucumber Bites

Herbed Cucumber Bites
Mix:
1 teaspoon lemon juice
2 tablespoons mint, thinly sliced (I used garden spearmint)
2 teaspoons chopped chives
4 ounces cream cheese, softened
1/8 teaspoon salt
Slice your cucumbers and cut into decorative shapes (ex: with cookie cutter). I peeled the cucumber in strips down the sides, then sliced.
Slice your radishes and lay on top of cucumber slices. Put a dollop of cream cheese mixture on top (about 1/2 tsp.) and serve.
