These Mini Banana Muffins came from my sweet mother!
This original recipe is for banana bread, but I wanted the tea party individual look and so used my mini muffin pans to bake these in.
I’ve tried healthier versions of banana bread using applesauce instead of butter, but nothing tops the warm moistness of this banana bread recipe!
Mini Banana Muffins

Mini Banana Muffins
Mix:
2 cups sugar
2 cups butter
2 eggs
Cream well.
Add:
3/4 cup buttermilk or sour milk*
1 teaspoon baking soda
3/4 teaspoon salt
3 cups flour
4 ripe, mashed bananas
1 teaspoon vanilla
1/2 cup chopped nuts, optional
Mix all.
To Bake Muffins:
Pour into greased mini muffin pans and bake at 325 for 10-14 minutes. Cool for 5 minutes before removing onto cooling rack.
To Bake Bread:
Pour into 2-3 greased bread pans and bake at 325 for 40 minutes or until toothpick inserted comes out clean. Cool for 15 minutes. Run knife around edge of pan before emptying onto cooling rack.
*To make sour milk: Measure out your regular milk and then add 1/2-1 teaspoon apple cider vinegar.
