Summer in a cup! Fresh strawberries, cream, strawberry jello, cream cheese . . . it doesn’t get much better than these.
The original recipe was from Taste of Home and it said to put this jello in a 9×13 pan. But I wanted the individual look and opted to put this jello into cups. They looked so pretty sitting by each place setting!

Strawberry Jello Cups
Bottom Layer:
1 package (3 ounces) strawberry gelatin
1 cup boiling water
1 cup cold water
Dissolve gelatin in boiling water. Add in cold water. Spray cups with non-stick cooking spray. Divide jello among cups evenly. Refrigerate until set.
Middle Layer:
1 envelope unflavored gelatin
1/2 cup cold water
1 cup half-and-half cream
1 package (8 ounces) cream cheese, softened
1 cup sugar
1/2 teaspoon vanilla
Sprinkle unflavored gelatin over cold water; let stand for 1 minute. In a saucepan over medium heat, heat cream (do not boil). Add softened gelatin; stir until gelatin is dissolved. Cool to room temperature.
Mix cream cheese, sugar, and vanilla. Gradually add the unflavored gelatin/cream mixture; mix well. Carefully pour over bottom layer. Refrigerate until set – about 1 hour.
Top Layer:
1 package (6 ounces) strawberry gelatin
1 cup boiling water
1 cup cold water
3-4 cups sliced fresh strawberries
Dissolve strawberry gelatin in boiling water; stir in cold water. Cool to room temperature. Stir in strawberries. Carefully spoon over middle layer. Refrigerate overnight.
Yields: 12-16 servings
