Gardens are so much fun! And so rewarding.
I know not everyone will agree with me because not everyone loves to garden like I do. And that’s okay! God made us all different.
But for me, there are few things more rewarding than walking out to my garden and picking my own tomatoes, green peppers, and cucumbers for these fun Summer Salad Jars. I hope to someday use the red and yellow peppers I’m trying to grow . . . but they are not ready yet.
You can put in any vegetable you’d like – sometime I might try red onion, but my onions did very poorly this year. The dressing I use is Good Season Italian dressing, so your vegetables should be ones that fit those flavors.
I made three of these jars, popped them in the refrigerator, and I’m letting them marinate. Three jars should last me for 4-5 days since I can’t quite eat a whole pint in one sitting!
Aren’t they pretty?
You simply chop up your veggies and put them in the jars. I like to layer them! I always say that food tastes better if it’s pretty! And layered veggies in glass jars is a beautiful thing.
Then drizzle about 1-2 tablespoons of Italian dressing over the vegetables. Put a lid and ring on, and let marinate in your fridge. Truthfully, I plan to only let one of those jars marinate about 2 hours, and then into my belly it goes at lunchtime!
