I’m subjecting my family to a new form of torture: that of trying new foods! We are going to have a supper every now and then (notice I won’t commit to how often) of new recipes for almost every dish. Frankly, I am tired of making the same old same olds all the time and crave some more variety in our menu. Maybe it has to do with spring fever . . .
I’ll let you know if each dish receives a thumbs up or down, and also a link to the recipe if it is online somewhere. That way you can enjoy it too!
Last evening was our first Taste of the Shoe. Our menu was Chicken and Cheese Tortilla Pie, Southwestern Chopped Salad, Sauteed Mushrooms and Asparagus Cuts, and Soft and Fluffy Strawberry Banana Cake. Plus, we added some good ol’ freezer applesauce in case it all turned out inedible!

Southwestern Chopped Salad

Probably a thumbs down. I loved the salad itself, but the dressing needed something more. I would like this with crushed corn chips and a southwestern dressing.
Sauteed Mushrooms and Asparagus Cuts
I saw this idea on Pinterest and simply used butter to fry up whole mushrooms and cut asparagus. Seasoned it with some sea salt, Johnny’s seasoning and black pepper.
Thumbs up all the way!! Several of the kiddos didn’t appreciate the mushrooms . . . but who truly trusts a kid and their vegetable anyway? The rest of us loved this!
Soft and Fluffy Strawberry Banana Cake

I did make some changes to this recipe. We substituted avocado oil for the coconut oil, put in coconut sugar in place of regular white sugar, and used part whole wheat flour.
Because of these changes, the “soft and fluffy” part became moist and dense – but was well received nonetheless. We loved this recipe and with the coconut sugar it was not too sweet!
