Yesterday was pasta sauce day! Someone on facebook had asked for a recipe, so I thought I’d share ours.
This recipe is a combo of two recipes, with my own version of making it. So we’ll call it:
The Shoe’s Marinara Sauce
You will need these ingredients:
1/2 bushel tomatoes
4 green peppers
3 large onions
2 cups canola oil
3 small cans tomato paste
2 tsp. garlic powder
1/2 cup salt
1 1/2 cups sugar
2 tablespoons oregano
2 tablespoons basil
2 tablespoons Italian seasoning
2 tablespoons parsley
Wash and cut the tomatoes, peppers, and onions. Run them through a blender.
Combine them with the rest of the ingredients and cook on the stove for 1-2 hours with the lids off so steam can escape. This will thicken it some.
Pour into jars and cover with lids and rings. Process in water bath for 20 minutes.
Note: I have never canned with stevia, but Gina at Home Joys has an excellent article here about it. Someday I might try it!
This recipe could be used as spaghetti or pizza sauce. But since I have not followed in the paths of other great Mennonite housewives and do not bake pizza every Friday night……we use this instead as a pasta sauce. My homemade pizza/spaghetti/pasta sauce is what I like to use for homemade lasagna!

This looks really yummy and easy! Approximately how many quart does this recipe make? Also, do you know what purpose the oil serves? Thanks!

Oh I completely forgot to put on how many it makes!! Thanks for the reminder. 🙂 I got 16 quarts out of this, so that would make 32 pints if you wish to can it that way. As for the oil, I honestly don’t know what it serves, but I looked at some other pasta sauce recipes and they call for it as well. Maybe someone else will chime in with an answer…
