Need a dessert for Sunday dinner? This is one I made the other evening for our church ladies night. When I left for the evening, my children were wondering if there would be any leftovers. I told them to pray really hard.
Sure enough, I came home with leftover fruit pizza to go in lunchboxes or eaten for snack and supper. Somehow, some of this yummy dessert even found its way onto my breakfast plate!
To begin, stir together 4 cups berries and 1 cup sugar. Raspberries or boysenberries are good for this since they are a juicy berry. Let this set for 1 hour.
Meanwhile……
You may begin the crust. And for this, I used a soft sugar cookie dough recipe.
Mix:
1 cup oil
1 cup butter
1 cup powdered sugar
1 cup sugar
Mix well and then add 2 eggs. Mix again and then add remaining ingredients:
1/2 tsp. cream of tartar
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
5 1/4 cups flour
Mix well. I like to make my fruit pizza in my big cookie baking sheet. We call it a Costco pan here in North Idaho. It’s a little bigger than a jelly roll size, so you’ll have to judge how much dough you want for your crust.
For my big baking sheet, it took about 2/3-3/4 of the cookie dough to fill it. For the leftover dough, I rolled them into balls and plopped them on a cookie sheet. Dip the bottom of a cup in water, then in sugar, and then press onto the cookies to flatten slightly. Bake these cookies at 350 for 10-12 minutes.
Bake the pizza crust at 350 for 12-15 minutes. Watch it carefully – you do not want to overbake it! Once you see a slight golden color appearing, take it out.
Filling:
2 – 8 oz. boxes cream cheese
2 cups sugar
Mix until creamy and spread on cooled crust.
Glaze:
Strain the juice from the berries that have been sitting for an hour. Add enough water to make 1 3/4 cups of liquid. Pour all but 1/2 cup into a pan. With reserved 1/2 cup, add 2 rounded tablespoons of cornstarch and mix until dissolved.
Cook juice in pan on medium heat until boiling. Add cornstarch/juice mixture and stir constantly until thickened. You can add 1/2 teaspoon almond flavoring if desired.
Cool. While it is cooling, place your berries and all the fruit you want on top of your pizza. Your imagination is the limit – strawberries, blueberries, kiwis, fresh pineapple, raspberries, thinly sliced apples, mandarin oranges – whatever is in season or looks good.
Once your glaze is cool but still runny, pour it over your pizza. Cool entire pizza before cutting.
